
Cauliflower soup
Ingredients:
- 1 Tbsp Nuttelex
- Half an onion
- 1 large cauliflower
- Half a teaspoon of curry powder
- 1 litre of vegetable stock
- 2 bay leaves
- Salt & pepper to taste
- Fresh coriander use as much as you like
Directions:
- Melt nuttlex, add onion and curry powder and cook for 10 minutes on low heat
- Add vegetable stock and small cauliflower pieces, drop 2 bay leaves into stock and cook for 15 minutes on low heat with the lid on
- Add salt pepper and coriander as desired
- Simmer for 5 minutes then blend
This is a delicious light soup that is super easy to make and great for cold winter nights :0)
